Butternut Squash Soup.

 I thought today I would share a favourite recipe of mine its quick simple and delicious and even better still its fat free and healthy and even better it’s not expensive.

 

Ok so for the ingredients you will need:-

 Butternut soup for four

Low calorie cooking spray

1 onion peeled and diced

1 medium butternut squash peeled deseeded and cut into wedges

1 small potato peeled and cut into quarters

2 cloves of garlic peeled and crushed

Salt and freshly ground black pepper

900 ml hot vegetable stock

Ok off we go….

Spray a large pan with low calorie cooking spray and place over a low heat. Add the onion and cook for 1-2 minutes.

 

Add the butternut squash and potato and cook for a further 2 minutes over a medium heat.

 Add the garlic and seasoning to taste.

 (Take care some vegetable stocks can contain a lot of salt)

 

 Pour in the vegetable stock and simmer for 25 minutes.

Use a hand blender or food processor and blend until smooth.  Add a garnish of sprinkled thyme or a teaspoon of crème fresh and enjoy!
